Wagyu Tartare on Crispy Shisho Rice ✨ Have you Wagyu Tartare on Crispy Shisho Rice ✨

Have you ever wondered how we make our popular Wagyu Tartare on Crispy Shisho Rice?  Now we lift the lid on the process and take you to the kitchen to see how our talented @chefzachfarr makes it. 

🥩Trim, cube, dice and mince A5 Rib cap wagyu from Kagoshima wagyu. (The waygu fat is renderded down and trimmings are used to make sauces) Dice spring onion and ginger blossom  and stir to combine. 

🫗Dress the tartare with ponzu sauce and set aside. 

🍚 Prepare crispy rice balls by rolling balls of rice in shisho leaves, dust them in flour, then dip in tempura batter and fry till crispy. 

🍽️To serve place crispy rice balls in serving tray. Top with small dollop of wasabi. Top with wagyu tartare and a thin slice of smoked akami Tuna. 🤌🏻

We approach our cocktails with the same level of finesse as our carefully crafted Yakitori. 

With notes of sweetness, umami, smoke, sour and bitter, our drink experience harmonises seamlessly with our menu. 

What is your cocktail of choice?
One of our most popular Yakitori is our Tsukune つくね , a  Japanese chicken meatball carefully skewered on  bamboo sticks and grilled over our binchotan charcoal.  As it cooks is skillfully glazed in a sticky taré that almost caramelised over the flame. 

It’s served with a free range egg yolk for dipping.  Really makes you think.., which came first, the chicken or the egg. 🤔

If it’s not delicately skewered in one of over  20 different variations and grilled over white hot binchotan charcoal… then it’s used to make stocks, sauces and even our moorish chicken skin crisps.

What better way to celebrate the weekend that with our Black Dragon. 

We make an infusion with @hennessy VS 2 year aged Cognac and black sesame seeds to infuse the cognac with a slightly nutty and deeply umami flavour. 

We combine the infusion with @disaronno_official amaretto, a soy and mirin syrup, lemon juice and a magical foaming soloution then hard shake over ice. 

The double strain it into a coupe glass decorated with 24k gold leaf. 

Looks incredible and sastra extraordinary with subtle umami and nutty notes. 

Pairs perfectly with our Wagyu tartar on crispy rice balls.
