ABOUT THE TEAM
From Marylebone to Senopati — Junsei’s story begins with two friends and a shared obsession for yakitori.
In 2021, Aman Lakhiani and his culinary school friend Zach Farr opened Junsei in London, bringing authentic Japanese yakitori to the heart of Marylebone. With Zach’s training at Michelin-starred Torishin in New York and Aman’s roots in culinary entrepreneurship, the pair crafted a space where fire met finesse, and skewers told stories.
Now in Jakarta, Junsei carries that same spirit — but with a local soul.
chEF AMAN LAKHIANI & CHEF ZACH Farr
First collaborating at culinary school, Chef Zach Farr joined friend Chef Patron Aman Lakhiani in July 2021 to open their debut restaurant Junsei, in London’s Marylebone, specialising in authentic Japanese yakitori.

Aman Lakhiani
Founder & Executive Chef
Chef Aman Lakhiani has been enamoured with the art of cooking since his early days in his family kitchen. A graduate of Johnson & Wales University in Providence, RI, he later trained in Tokyo at the Tsukiji Sushi Academy. His culinary journey includes stints at Dos Palillos (Barcelona), Locavore (Ubud), and Akira Back Jakarta — experiences that shaped his philosophy of fire, flavour, and finesse.
Jakarta is more than a new chapter — it’s a return home, with a new fire to feed.

HADITS FAHLEVI
Head Chef
Trained at the Bandung Institute of Tourism, Chef Hadits Fahlevi’s journey spans from one of Jakarta’s top F&B consultancies to Junsei London, where he trained under Chef Aman — mastering the discipline, balance, and soul of yakitori. Now back in Jakarta, Hadits leads the Junsei kitchen with quiet intensity, bridging Japanese tradition with local soul. With a focus on fire, balance, and precision, he approaches every skewer with deep respect and deliberate craft.

DEDI MULYADI
Head Bartender
At Junsei’s bar, Dedi crafts more than just drinks — he tells stories in every glass. With years of experience and an instinct for balance, Dedi brings playful precision to every pour. His creations celebrate Japanese spirits, layered flavors, and soulful technique — crafted to complement the rhythm of the night. Whether it’s smoky, citrusy, or spiked with umami, every cocktail is designed to linger — on the palate, and in memory.
